Are We" "Little Rainbow " is located in the lush rolling countryside of Hillsdale, New York, at the foothills of the Berkshires, just two hours north of New York City. |
| Our herd consists of the beautiful brown and white deer-like Toggenburg and the varied colored Lamancha dairy goats. The "Toggs" originated in the Toggenburg Valley of Switzerland; while the "Lamanchas" are American in origin and are known for their tiny ears and sweet disposition. Our goats produce top quality milk, are genteel in nature, and have uniquely individual personalities. The animals are fed the best of feeds, grain, hay, minerals, and salt; no hormones of any kind. | |

Although we are no longer processing our milk for cheese, we thought we
would explain what we did and pass on some information to you about goat
milk and cheese.
The
milk was carefully handled and pasteurized under a special 'gentle pasteurization'
process used to insure the maximum of nutrients, purity, and flavor for
our milk and many cheeses. We used no additives, coloring, or artificial
preservatives; we used only the purest of natural goat milk, cultures,
and vegetable enzymes in the making of our cheeses. Our bottled milk was
prepared and bottled immediatly after milking to ensure the freshness.
The close personal caring of our animals, milk, and cheese, comes through
in the quality and flavor of all our products.
