Our most popular and
versatile cheese. This semi-soft cheese is mild and creamy with a
slightly nutty taste. Its versatility is found in its ability to
capture the characteristics in which it is being used; in
hors-d'oeuvres, main dishes, salads, sauces, or desserts. This
versatility makes them a chef's delight!
CHEVRE-PEPPER: A delectable and spicy
taste, created by rolling the fresh chevre log in coarse cracked
peppercorn.
CHEVRE-"SPECIAL
HERB: A truly delightful
taste treat; the fresh herb log is rolled in our own special
"secret" herb blend. We tease our friends and customers with the
"Special Herb" by challenging all to guess the exact herb
combination. Those who guessed correctly could win a free
log.

Some suggestions are: Baked as an
appetizer - covered with sesame seed and baked - or lightly, served
with salad greens and sun-dried tomatoes.
- May be served with crackers, bread tidbits, or fruit.
- Try adding a dollop on top of chili or thick vegetable
or beef soups or stews.
- As a desert, place a slice on a small plate and cover
with fresh currant sauce, or any fruit preserve of your choice.

"Crottin
Mediterraneen"

The
Crottin Mediterraneen is a round of chevre marinated in virgin olive
oil and a blend of herbs with an added sun dried tomatoe for additional
flavoring. Like our logs, this cheese is very very versatile.
Great in pasta, served with bread or crackers. Delicious in salads as
shown. One of my favorite ways of enjoying the cheese is with a picnic
or "tailgate party". We serve the cheese right in the jar with crunchy
big pretzels. This is our favorite at snack time at the shows and fairs
we attend with the animals.
The cheese is shipped in reusable 8oz glass
jars.

"Ripened
Crottin"
|

|
Our
aged and ripened Chevre has been our latest taste treat. They are offered
"in season" as they are diffecult for us to make. These little gems take
a lot of environmental control and much depends on the weather. We at
this time are making 3 different varieties.
White Mold
Rind: This ripened crottin in firm on the inside with a white bloom
to the outside surface and resembles a goat milk camembert type
cheese. Approximately 7oz in size.
Blue Mold
Rind: This ripened crottin has a blue mold bloom over the surface
and tends to get stronger in flavor and softer in the middle until
it almost is spreading consistancy. A summer item when available.
Crottin
Affine: This little cheese is the product of a special ripening
process. Its full bodied flavor is especially enjoyed with crackers
and wine, sliced apples, or baked with sun dried tomatoes and served
with a salad. "...a softly oozing moresel, worth asking
for...("Gourmet").
